Ingredients
For Wings
- 2 lbs Wings cut into halves
- 1 tsp Chief Garlic Salt
- 1/2 tsp Chief Cayenne Pepper
- 1/4 tsp Chief Black Pepper
- 1/4 tsp Chief Smoked Paprika
- 3 tbsp Chief Pimento Green Seasoning
For Batter
- 1/4 cup Chief Rice Flour
- 1/4 cup Corn Starch
- 1/4 cup Water + 2 tsps
For Sauce
- 1/4 cup Unsalted Butter
- 5 cloves Garlic finely minced
- 3 tbsp Brown Sugar
- 2 tsp Chief All Spice Soy Sauce
- 2 tbsp Honey
- 1 tbsp Chief Tamarind Chutney
- 1 tbsp Chief Shadon Beni Chutney
- 2 tbsp Water
- 1 tsp Chief Chili Flakes
Instructions
- Season wings with spices and Green Seasoning and let sit to marinate for 1 hour.
- Meanwhile, make the batter by mixing the rice flour, cornstarch, and water and whisking until combined. Set aside.
- Preheat oil to 350 Degrees Fahrenheit. Dip seasoned wings into the batter, and place in hot oil to deep fry 5 or 6 pieces at a time.
- Do not over-crowd the hot oil when frying. Let fry for 5 to 6 minutes then remove and place on napkins to drain.
- Make the sauce by placing the saucepan over medium to high heat and adding in the butter followed by the minced garlic.
- Let sweat for 1 minute then add in the rest of the ingredients and bring to a simmer. After 2 – 3 minutes, the sauce should slightly thicken and come together.
- Remove from heat and place in the fried wings and toss in the sauce. Serve and enjoy!
