  • 3 1/2 lb Duck (cut into pieces)
  • 1/4 cup Chief Green Seasoning

  • 2 tbsp Onions (chopped)
  • 1 tbsp Garlic (chopped)
  • 2 tbsp Celery (minced)
  • 1 tsp Ginger (minced)
  • 1 tbsp Chadon Beni (chopped)
  • 4 Carapoulay Leaves (Curry Leaves)
  • 2 tbsp Chief Brand Duck & Goat Curry Powder (or extra Chief Curry Powder)
  • 1 tbsp Chief Garam Masala
  • 1/2 tbsp Chief Roasted Geera (Cumin Powder)
  • 2 tsp Chief Brand Turmeric Powder

Step-by-Step Instructions:

  1. Marinate the Meat: Place the duck pieces into a large bowl. Season generously with the Chief Green Seasoning, Chief Curry Powder, salt, and black pepper. Let it marinate for at least one hour, or overnight for the absolute best flavor.
  2. Toast the Spices: Place a medium iron pot over high heat. Add the coconut oil and toast the whole cumin seeds, mathee, and cardamom pods for about 30 seconds.
  3. Sauté the Aromatics: Toss in the chopped onions, garlic, celery, ginger, carapoulay leaves, and chadon beni. Sauté for 3 minutes until brilliantly fragrant.
  4. Build the Curry Base: Add in your remaining spices: the duck/goat curry powder, turmeric powder, Chief Garam Masala, and Chief Roasted Geera. Stir well, allowing the spices to cook and bloom in the pot for 3 minutes.
  5. Create the Paste: Pour in 1 cup of water to create a thick curry paste. Cover and let it cook for another 3 minutes.
  6. Cook the Duck: Add the marinated duck into the pot, stirring thoroughly to coat every piece in the curry paste. Cover the pot and let it cook over medium-high heat for 12 minutes.
  7. Simmer and Tenderize: Pour in enough water to cover the duck, making sure to scrape the bottom of the pot with your spoon to release any delicious caramelized bits. Cover and let it simmer for 25-35 minutes until tender.
  8. Final Polish: If you prefer a saucier finish, add an additional cup of water. Remove the cover, reduce the heat to low, and let it cook for 10-12 more minutes. Taste and adjust salt and pepper if needed before serving!
