Curried Eggs Recipe

Curried eggs is a common dish where you need to bring a plate to a picnic or a bbq. They are delicious finger foods and a quite healthy option because they are rich in protein! 

These eggs are an Australian variation on the American deviled eggs that traditionally used a yellow style curry powder that is heavy in turmeric and fenugreek. These flavors combine with the egg yolk to give a flavorsome bite.

Ingredients:

You will need:

  • 6 hard cooked eggs
  • 2 tomatoes , sliced
  • 1 med. Onion
  • 1 tsp CHIEF salt
  • ¼ tsp CHIEF black Pepper
  • 1 lb. potatoes (4 medium)
  • 2 tbsp. CHIEF curry powder
  • 2 tbsp. oil
  • 1 cup water

Directions:

1. Fry shelled eggs in oil until brown, take out

2. Add CHIEF curry powder, onions, tomatoes, cubed potatoes, CHIEF black pepper and salt, water

3. Cook until potatoes are tender

4. Add eggs, serve hot
